distinguishes it as a style?

Memphis evokes pork and dry rub. Carolina, mustard based sauce and pulled pork. Texas is mainly beef. KC does a pork and beef well, with a great tomato based sauce.

How would I know I was eating STL BBQ? Provel on it?
