The pre-BCS (a.k.a. "mythical NC" poll era) is the last time bowl games played any role in deciding the champ, and it was often disputed with multiple claims to the title. It was before my time, but everything I've read about it indicates that it was a terribly flawed system.
And more to the point, CFB *exploded in popularity* after it switched from "mythical NC" polls to the BCS system (essentially, a 2-team playoff seeded by pollsters and to a lesser extent computers).
But while the bowls have only been exhibitions for the past 25 years, fans have still enjoyed them (as you alluded to). Perhaps they've been slightly diminished by the playoff taking teams away from the bowls, but it's negligible IMO. I'm still as interested in bowl games as I was back in the early 2000's when I first started following CFB. I enjoy the conference rivalry aspect of it, following the bowl records of each conference (the media hypes that up a lot as well).
