for Red Cross then claim you're being taken advantage of.

No one's forcing you to do it. You can quit at anytime if you don't like the terms.

And in the case of student-athletes, they are being compensated with full-ride scholarships and other benefits. If they don't like it, they can quit any time and someone else will gladly take their place.
