the reality of STL barbecue is this:
To get the real deal tradition, i.e. the STL answer to Arthur Bryant's and Gates, you have to venture into North County STL, which so few visitors or West County types are willing to do. I can't pass judgment on that either way, the crime and what not is what it is.
But if you were to go there, and go to a place like Roper's Ribs or c&k barbecue, you'd uncover the actual STL BBQ tradition.

It's interesting, unique, and if as well publicized as Gates or Bryant's etc. might garner some traction. Things like snoots, tripe etc.
If you are going to stay away from there, I would say Salt & Smoke is way better than Pappy's and more STL style. I mean they have burnt end toasted ravioli - that's just unfair.
Bogart's is also better than Pappy's. Most places are. I don't know why or how Pappy's became the most prominent STL bbq spot, it shouldn't be.
Also lots of good places to get pork steaks around the area, churches and VFWs and what not do weekend pork steak cookouts that are some of the best honestly.
