contract that requires you to co-sign a number of loans with me. Are you legally and morally responsible for those loans? After all we had a business relationship and you co-signed the loans.

That is exactly what is happening to the business owners. The union is being forced upon them and rules of that relationship can be used to force the owner to close his shop. So it does not matter how a contract was entered as soon as it is signed the owner is bound to it, right?
