I don't accept your premise that Cooper is a more effective teacher than Ellarbee. The players are raving about Ellarbee and in the videos I've watched of him he is a very good communicator with a succinct way of communicating the key points about offensive line play. Potential recruits are also commenting very positively on Ellarbee.
Bottomline, it's good to have both Cooper and Ellarbee on staff. Cooper certainly adds to the quality of the offensive staff with the experience he's had, including that he's spent a few years under Heupel so knows what Heupel likes.
