summed it up perfectly. "The Big 12 isn't deep, it's wide".
You basically have a huge collection of teams that are rated 25-50 nationally and could beat each other on any given day.
And most seasons are going to be like that because they don't have blue blood programs. Will there be seasons teams pop up and go undefeated? Probably. But it still won't carry weight because those teams won't have to beat any blue bloods to do it.
Even Indiana's absolutely awful schedule includes Ohio St. and possibly a 2nd game with Ohio St. or Oregon.
