Sterk wasn't Choi's guy, just someone he inherited when he got to MU.

Sterk was to Choi what Odom was to Sterk. Sterk wanted to upgrade and moved on from Odom. Odom wasn't horrible but his upside was 6-6/7-5. That's not what Sterk wanted and it was easier to make the move on the guy Mack Rhoades hired than it would be to do so to his own hire (see Cuonzo Martin).

The same thing applies with Sterk. He was passable, the AD equivalent to a 7-5/6-6 football coach and Choi wanted more out of the position. Moving on from the guy Hank Foley hired is easier than doing so to someone he had hired.
