The closest the US ever got to hyperinflation was inflation around 25% when they came out of the Panics of 1909-1910 and 1913-14 and right before the panic at the end of WW1. What you get without a central bank is wild swings between boom and bust (The Fed came into existence at the end of the 1913 panic, and the panic in 1918 was driven mainly hyperinflation in Europe, and because the Fed hadn't really started to act as they do now)
