Those quotes almost sound completely made up

Particularly given the parenthetical comments and italics used for emphasis. If they are real quotes, which I really doubt, they obviously came from someone very close to the program as they refer to Underwood as "Brad" and know insider things such as players not showing up for workouts, etc.
