They are interpretations. Interpretations that can be highly flawed.
Don’t you remember the dress? Is it gold and white? Or Blue and black? It’s one of the most simplistic examples of how perceptions are not real.

Beyond that, whether you perceive it was gold and white or blue and black, you still aren’t getting the full picture as your eyes are very limited in the range of the light spectrum it can detect.
This is just scratching the surface with the most simplistic example.
