A pellet smoker is good because it does a lot of things really well and is really easy. It is good at a lot but the best at none.
I will say this though you can get a lot of smoke on stuff as long as you use the right pellets (i know you said you didn't think they matter) and you have a pellet smoker that still pulls from one side to the other (the firebox is on one side and the outlet tube is on the other).

They actually dump so much smoke that I prefer mixing them with another pellet 50/50 to be honest.
The smoke has to do with the lignin in the wood. The pellet process reduces a lot of lignin. Pecan shell have a ton of lignin so they can hold up to the pellet process
