What's on the Christmas Even menu people?

At the TJS house, we'll have 9 at the table, with a 5 rib standing rib roast with a crust made from butter spread over the roast, with St. Louis' finest spice monger Urzi's prime rib seasoning spread all over it. Cooked, as it should be, to medium rare.
We'll use the juices to make popovers, have garlic mashed potatoes, a St. Louis Hill inspired salad replete with provel, with some carrots and greens on the side.
Various red wine for the meal, coffee with perhaps a bit of Weller's bourbon for immediately after dinner, with a buche' de noel for the piece' de resistance dessert.
