dirty secret that pub style is "cracker" pizza too. Gasp!!
Provel is mild on its own and I am fine with it. Imo's loads its up with oregano and that provel-oregano interaction is what a lot of people think they don't like. I've had STL style at a lot of Hill places and others that don't douse it in oregano and the provel by itself is really pretty mild.
You put a slice or provel on a sammy, you barely notice you're eating it. It's mild.
