they only take a scholarship for one season, and they fill an immediate need.

That's convenient in many situations. For example, maybe the coach decides that next year's recruiting class has better options so he wants the scholarship to be available for the next class. The grad transfer is essentially a one-year placeholder for the scholarship that provides immediate production at a position of need.
