Coffman would've benefited from another 20 pounds or so.
Great hands and a long frame only go so far if you don't have the quickness to get open vs. NFL linebackers and safeties.
He probably could've still been effective in limited roles (I easily could see him as an NFL red zone threat), but NFL rosters are restricted enough that niche players often don't find a home. A tight end needs to either be elite at one thing or versatile enough to do multiple things. He lacked versatility and lacked the athleticism to be elite at his best skill.
